Cashew Banana Honey Muffins

Ingredients
Raw Cashews | 300 grams
Ripe Banana | 3
Honey | 1/2 cup
Olive Oil | 1/4 cup
Flaxseed Meal/Chia (optional)| 2 tablespoons
Water/or Milk | 1/3 cup
Bicarb Soda | 1 teaspoon
Apple Cider Vinegar | 1 teaspoon
Sea Salt | 1/4 teaspoon
Dark Chocolate Chips | 2/3 cup (Optional)
Directions
Place cashews in a high-speed food processor and grind into flour. Add bananas, honey, olive oil, flaxseeds or chia (if using) and water to the cashews and blend on medium speed until well mixed. Sprinkle the bicarb soda and salt over the top of the muffin batter then pour the apple cider vinegar over the bicarb soda and blend on high speed for 10 seconds. Add the chocolate chips (if using) and mix slowly until combined. Divide the mixture into 10 medium sized muffin cases in a muffin tray and bake at 180oC for ~ 25 mins until lightly browned and firm to touch. Enjoy hot or cold.
